“Cool as a Cucumber” Black Bean Mango Salad

Inspired by my friend Sandra’s excellent black bean-mango salad, this is a summer BBQ favorite.

Black beans are packed with fiber and are a healthy, plant-based source of protein. If you are new to eating beans, digesting them is easier when you eat mindfully, chewing well, and minimizing distractions. Cucumbers are incredibly cooling and hydrating this time of year. And mangos bring to mind dreams of the tropics.

 

Prep Time: 5 minutes

Chill Time: 1-4 hours

Ingredients:

½ cucumber, peeled and chopped

1 mango, peeled and chopped

1 can black beans, drained and rinsed

Juice of ½ – 1 lime

Unrefined sea salt & pepper to taste

Handful of fresh parsley or cilantro, chopped

Optional: ¼ red onion, chopped

Combine all ingredients in a bowl and stir. Cover and refrigerate for 1-4 hours before the BBQ fun begins!
